Selected for a combination of high attenuation rate, low ester production, and development of other congeners that are beneficial to your distilled spirits. Eau De Vie is A very good choice for alcohol tolerance and stuck fermentations. Produces a very clean, dry profile, low ester formation and other volatile aromatics. Since very high degrees of attenuation are desired without associated esters commonly created by stressed yeast, greater levels of nutrients essential to proper yeast cell growth and metabolism are needed than for producing other fermented beverages.
